Come home from work, it’s 7pm.. okay, now what to cook for dinner? After getting home late from working all day, the last thing I want to do is make a complicated dinner! I’m listing some healthy dinner ideas below so you can cook an easy weeknight dinner!
Couscous and Chicken Sausage
Ingredients:
Near East Couscous (Parmesan flavor)
Al Fresco Chicken Sausage
Steps:
- This recipe is super easy! Just follow the instructions on the couscous box (make sure to put the right amount of water in or it’ll be runny) and sausage, then add both in a bowl. In 7 minutes, your healthy meal will be done!
Chicken Balsamic & Couscous Meal
Ingredients:
1 1-1/2 lbs raw chicken tenders
Mozzarella cheese (I like the ones that are already pre-cut)
1 avocado
1 tomato
Salt & pepper
Near East Couscous (Parmesan flavor)
Steps:
- Preheat oven to 350 and add salt/pepper to chicken and mozzarella cheese to chicken then cook for 45 minutes
- Cut Avocado and Tomato and add on top of chicken
- Cook couscous (follow instructions on box)
Chicken Taco Bowls
Ingredients:
1 1-1/2 lbs raw chicken tenders
Salt & pepper
1 avocado or Guacamole
1 tomato
Romaine Lettuce
Light Sour Cream
Pack of Rio Rancho Tostada bowls
Fat Free Mozzarella Cheese
Steps:
- Preheat oven to 350 and add salt/pepper to chicken then cook for 45 minutes
- After chicken is done, toast shells in oven (follow instructions on box)
- Add cheese, lettuce, avocado or guac, tomato, sour cream and any other toppings you want!
Egg, Avocado & Sweet Potato Bowl
Ingredients:
Eggs
Sweet Potatoes
Avocado
Steps:
- Add oil to pan to heat up
- Cut up sweet potatoes in thin slices and add to a bowl
- Then add spices salt, pepper, garlic powder, paprika to sweet potatoes slices
- Add sweet potatoes to pan once oil is heated up, and cover for 10 minutes until they are crispy
- Poach or fry egg sunny side-up
- Cut up avocado. Add all to bowl with sweet potatoes
Easy Fajita Bowls
Ingredients:
Rio Rancho Tostada bowls
Salt & pepper
1 1-1/2 lbs raw chicken tenders
Black beans
Corn
Green & Red Peppers
Fat Free Mozzarella Cheese
Light sour cream
Steps:
- Preheat oven to 350 and add salt/pepper to chicken then cook for 45 minutes
- While chicken is almost done cooking, add oil and vegetables to pan on the stove to cook
- After chicken is done, toast shells in oven (follow instructions on box)
- Add cheese, sour cream, veggies, and any other toppings you want!
Shrimp Vegetable Low Mein
Ingredients:
BirdsEye Oriental Stir Fry Veggies (can get these in the vegetable freezer isle)
Shrimp
Low Mein Noodles
Steps:
- Defrost shrimp (can use fresh shrimp, I like frozen because it’s cheaper and lasts longer)
- Follow instructions on Birdseye Oriental Stir Fry Veggies
- Boil water and add low Mein noodles
- Add oil to pan and cook shrimp for 2 min on each side
- Add to large bowl
Egg Low Mein
Steak Strips
Eggs
Low Mein Noodles
Green and Red Peppers
Corn
Steps:
- Cook steak strips on the stove
- Boil water and add in Low Mein Noodles- cook to test when they’re ready
- Sauté green peppers, red peppers and corn on stove until crisp
- Cook egg sunny side up
- Combine all into a bowl and add egg on top
Chicken Avocado Salad
Ingredients:
Romaine Lettuce
Avocado
Bolthouse Farms Ranch Dressing (I also like the Avocado one or ceaser is really yummy too!)
Smoky Bacon Cheese
1-1/2 lbs Chicken ( You can buy raw chicken tenders to cook or use a rotisserie chicken)
Broccoli
Salt & pepper
Steps:
- If cooing raw chicken, preheat oven to 350 and add salt/pepper to chicken then cook for 45 minutes
- While waiting for the chicken to cook, cut 1 broccoli and 1 bacon cheese block and add to bowl
- Combine 1 bag of romaine lettuce, 1 avocado, and boathouse farms ranch dressing (use a decent amount, but not the entire bottle)
- Once chicken is done, add in and sir.
